Thermo Scientific: Automated and Compliant Nitrogen, Protein, and Sulfur Determination for QA/QC Analysis of Brewery Products by Organic Elemental Analysis

For food quality control and R&D purposes of beer products, analysts need to define the nitrogen, protein, and sulfur content of the raw materials (barley, malt), intermediate (wort), and final products.

Protein content gives information on the survival, growth, and productivity of the yeast used to convert the sugar into ethanol and carbon dioxide. The nitrogen content in beer is important to evaluate the stability and texture of head foams.

Organic Elemental Analysis is an automated analytical solution recognized by Official Associations and proven to be an alternative to the time-consuming Kjeldahl Method for protein analysis and for sample characterization in QA/QC.

In this webinar, the workflow for analysis of samples from beer production by organic elemental analysis is presented, along with details regarding sample preparation.

Presenter: Dr. Liliana Krotz (OEA Application Manager, Thermo Fisher Scientific)

Graduated in Biochemistry at the Faculty of Pharmacy and Biochemistry at the University of Buenos Aires, Argentina, Liliana had worked eight years as Professor’s Assistant in Organic Chemistry Department at the Faculty of Pharmacy and Biochemistry (University of Buenos Aires, Argentina). With her post-graduate scholarship at the Organic Chemistry Department, Liliana moved to the University of Padua in Italy, where she spent three years researching in the Faculty of Industrial Chemistry.

In 1994, she accepted the role of Global Product Specialist in Organic Elemental Analysis at Thermo Fisher Scientific and in 2019, she accepted the role of OEA Application Manager, with the responsibility of supporting sales and customers with technical and analytical demonstrations, marketing materials, and managing collaboration with customers for the optimization of new analytical methods.

She is the author of several publications in international journals, and over the years she participated and presented at national and international congresses, covering different application fields such academic, pharma, petrochemistry, agronomy, marine science, environmental, and food and animal feed.
